LUBY'S CULINARY SERVICES IS NOW HIRING A Food Service Director SUMMARY OF JOB DUTIES: Plans, directs, and manages entire food/ dietary service operation. Responsible for purchasing and scheduling staff to budget and operational needs. Oversees the production of patient and retail food services. Provides meal services according to patient needs and retail food services while adhering to established guidelines of the department, medical staff, and regulatory agencies. Manages the preparation and servicing of food according to Luby's recipes, portions, and guidelines. Must follow and adhere to all federal and state laws and regulations as well as code of conduct standards. Orders food needed according to patient and retail menus as well as catering events, Doctor's lounges and break areas, controls par levels and takes monthly inventory. Verifies daily tickets or cash sales with cashiers. Assists retail cashiers as needed. Helps with managing client and customer relations, effectively works with facility staff to insure achievement of department goals. Monitors and controls portions, tray costs, and actively seeks for new ways to decrease costs. Plans and prepares work schedules to meet servicing times and number of meals served.Job Requirements:EDUCATION REQUIREMENTS: Food Service Managers Certification or Serve Safe Certified or equivalent Prefer 4-year degree or minimum 2-year culinary degree with 5 years' experiences as food service director, manager or equivalent SKILLS REQUIRED Strong organizational and communication skills, motivational abilities Ability to use Excel and other computer programs to schedule, input daily sales, operational data, and create reports P&L reports experience, ability to read and comprehend and understand budget to actual operational results Ability to manage the execution and preparation of Luby's recipes and insure proper portions and food is served to all patients according to their medical diets, personal preferences, and restrictions General knowledge of all kitchen equipment use, safety, and sanitation standards, inventory control and time management
